TRACEABILITY

TRACEABILITY

IT IS IMPORTANT TO KNOW...

WHERE YOUR FOOD COMES FROM

Traceability is the ability to trace or follow a food product through all stages of production, processing and distribution. It is essential for food safety.

All of our Wagyu cattle are born on our farm and remain there for the duration of their lives. We know exactly when each and everyone one of them was born, and who their mothers (dams) and fathers (sires) are. Each Wagyu sires has a unique genetic make-up, which influences the carcase traits of his offspring, including: marble score, marble fineness, ribeye area and yield.

When our Wagyu cattle are fit for slaughter they are transported to a local abattoir, less than 15 miles away. A local butcher, who has been trained in the art of butchering Wagyu beef, then butchers the carcase to our unique specification and returns the final products to us for sale.

Being in control at all stages of production, processing and distribution enables us to supply you with a top quality product, of which we are immensely proud.
